The tomatoes that are used are slowly sun-dried by the California sun, then they are cut into small pieces and are introduced into the oil. This olive oil combines the sweetness and natural flavor of the tomatoes and our wonderful fig-sweetened vinegar with the flavor of the garlic that many of us love so much.
