Ingredients: 1 bunch of thin green onions....cut in 2" lengths, 1 bunch of thin asparagus....cut in 2" lengths, 1 tablespoon of Ali-Oli or Garlapeno, some Eliki olive oil, some fresh shrimps, 2 eggs per person.
Saute the green onions and asparagus in a frying pan with one tablespoon of Ali-Oli or Garlapeno and with some of our high quality Eliki olive oil. While the onions and asparagus are still crunchy, add some fresh shrimps...stir fry but do not overcook. Scrumble 2 eggs per person and mix them with the vegetables and shrimp. When cooked, serve it on warm toast accompanied by a glass of wine.
